East Bank Club, an upscale and prestigious fitness, sports, and dining facility in Chicago, is seeking a skilled Banquet Sous Chef to join our dynamic culinary team. As the Banquet Sous Chef, you will assist the Executive Chef in overseeing the culinary operations for our banquet events. You will be responsible for ensuring the highest standards of food quality, presentation, and service while providing exceptional dining experiences for our banquet guests.
Assist in managing and supervising all culinary operations for banquet events. Collaborate with the Executive Chef and Banquet Manager to develop banquet menus, create innovative dishes, and ensure seamless execution of events. Ensure proper food storage, handling, and sanitation practices in compliance with health and safety regulations. Lead and mentor a team of talented chefs, maintaining a positive and collaborative work environment. Uphold the club's commitment to culinary excellence and exceptional service.
Job Responsibilities:
Assist in planning, organizing, and overseeing the culinary operations for banquet events
Collaborate with the Executive Chef and Banquet Manager to develop banquet menus and create innovative dishes
Ensure proper food storage, handling, and sanitation practices
Maintain inventory control and cost management
Supervise and train banquet culinary staff
Maintain a positive and collaborative work environment
Ensure the highest standards of food quality, presentation, and service
Coordinate with other departments to ensure seamless execution of events
Relieve Executive Chef and Sous Chef of their areas during absences, days off, vacation etc.
Assist other Sous Chefs and/or areas as needed.
Resolution of employee issues
Enforce all policies consistently in all areas
Verbally counsel and discipline employees; recommend any formal discipline to Executive Chef
Review employees as needed: 45-day, 90-day and annual reviews
Requirements
5+ years of experience as a Banquet Sous Chef or in a similar leadership role in a high-volume banquet setting
Culinary degree or equivalent experience required
Good knowledge of banquet operations and ability to lead a team
Strong culinary skills and knowledge of diverse cooking techniques and cuisines
Exceptional leadership and organizational abilities
Excellent communication and interpersonal skills
Knowledge of food safety and sanitation regulations
Ability to work in a fast-paced, high-pressure environment
Passion for culinary excellence and commitment to delivering exceptional dining experiences
Ability to work a flexible schedule, including weekends and holidays
Experience with inventory management and cost control
Proven ability to handle multiple priorities and meet deadlines
Positive attitude, strong work ethic, and a team-oriented mindset
Must be able to lift 50 lbs
