Design and lead project plans including project scope, success criteria,
and risk analysis using knowledge of Dairy processing practices including
pasteurization, sanitary design, pathogen detection, homogenization,
membrane filtration, evaporation, drying, powder fluidics;
formulations of sports nutrition and dairy products using dairy protein
powders; pilot plant equipment including UHT/HTST Processors,
homogenizers, membrane filtration (MF, UF, NF, RO), powder
evaporation and drying, process cookers/extruders, pumps, &
mixers; sensory analysis, shelf-life studies, and prediction model
development; analytical instrumentation and/or laboratory testing methods
such as viscometer, RVA, CEM, FT, Texture Analyzer, Malvern Particle
Sizer, colorimeter, moisture and water activity, CE, ion-selective
electrode, heat stability, emulsion capacity and stability, solubility
index, spectroscopy, chromatography; statistical (JMP), timeline
(MS Project) and product lifecycle management (Accolade) software.
Lead applications and prototype development with new and existing ingredients.
Support customers in using ingredients by leveraging understanding of
ingredients portfolio and their applications. Assure all projects are
tested, and that testing is carried out to the satisfaction of the Research
Department and Quality Control. Collect, organize, and report data in a
manner that it is useful to upper management in making qualified decisions
regarding the project. Run and perform sophisticated analytical scientific
tests to further improve knowledge of the physio-chemical properties of our
products. Monitor product performance to gain a sound understanding of the
performance of current products and processing. Provide technical expertise
to internal and external departments, and/or customers. Participate in
conducting Research Plant trials to anticipate actual plant problems that
production may incur. Help to lead and assure a smooth transfer of the
researched technology to manufacturing facilities. Provide product ingredient
specifications, nutritional analysis, and product/process evaluation
support to production, per each plants' production requirements and
inventory. Transfer new technologies to Production plants by leading the
project initiation of the technologies at each Manufacturing plant. Assist
Technical Services with training plant personnel on the science
characteristics that the technology provides with the new product offerings.
Develop Intellectual Property ideas and contributions. Assist in
development, guidance, troubleshooting, installation, and design of
capital projects or installed systems. Execute technical/research projects
and collaborates with team members to achieve strategic outcomes.
Requirements: Master of Science in Food Science, Dairy Science,
Agricultural Systems, or a related field + three (3) years of
experience as Food or Dairy Scientist/ Technician. In lieu of MS degree, a
Bachelor of Science in fields listed is acceptable + at least five (5)
years of progressive, post-baccalaureate experience as Food or Dairy
Scientist/Technician. Experience and/or education to include at least two
(2) years of working knowledge of: Dairy processing practices including
pasteurization, sanitary design, pathogen detection, homogenization, membrane
filtration, evaporation, drying, powder fluidics; formulations of
sports nutrition and dairy products using dairy protein powders; pilot plant
equipment including UHT/HTST Processors, homogenizers, membrane
filtration (MF, UF, NF, RO), powder evaporation and drying,
process cookers/extruders, pumps, & mixers; sensory analysis,
shelf-life studies, and prediction model development; analytical
instrumentation and/or laboratory testing methods such as viscometer,
RVA, CEM, FT, Texture Analyzer, Malvern Particle Sizer,
colorimeter, moisture and water activity, CE, ion-selective electrode,
heat stability, emulsion capacity and s ability, solubility index,
spectroscopy, chromatography; statistical analysis, project timeline
management. Travel requirement of up to 20% of work schedule. May work
remotely up to two days per week.
