What are we looking for?

The Cost Controller serving Waldorf Astoria Maldives Ithaafushi assist to provide an audited analytical review of the Food and Beverage and Spa operation. Responsible for the preparation of daily and monthly Food and Beverage cost reconciliations by providing an analytical review with comments. To ensure a SOX compliant approach is taken to all aspects of Food and Beverage control. A role that requires collaboration with the Director of Food and Beverage and the Director of Culinary involving purchase price reviews, menu costings etc What will I be doing?

  • Maintain menu costings for all food and beverage items and ensure the department is aware of any pricing issues.
  • To ensure that food and beverage stocks are held within the resort objective.
  • To ensure that the system of stock issuing to outlets and departments are carried out correctly.
  • To ensure all expiry dates and inventory turnover within the property are monitored.
  • To check that all items (both food products and other supplies, including chemicals) are stored and used properly, without any waste and limit spoilage to a strict minimum.
  • To post or record all transactions related to expenses.
  • To maintain and liaise with Store Supervisor and Assistant Purchasing Manager in maintaining the inventory movement, par levels, minimum and maximum levels.
  • To ensure all food and beverage items are recorded in the correct revenue center in the Check SCM.
  • To be alert of miss-appropriation or cheating/theft.
  • To maintain proper filing system in the section.
  • To prepare the daily food cost report and send to the Director of Food and Beverage.
  • To take ownership of monthly inventory taking and random spot checking on all the stores and outlets.
  • To make sure to hand over completed receiving batch daily basis to accounts payable for process payment to the suppliers.
  • To take ownership and prepare the monthly reconciliation reports and departmental expenses and journal voucher.
  • To prepare monthly variance report for all the stores, outlets and operating equipment.
  • To prepare monthly VIP amenities consumption report as per VIP category wise.
  • To carry out recipe costings, yield testing, menu engineering and other control base activities and in preparing reports.
  • To actively conduct the random check for goods received in compliance with Hygiene Standards and resort requirement.
  • To be prepared to do any other work within the department, in order to assist other areas as and when requested by the Chief Accountant/Asst. Director of Finance and/or the Director of Finance.
  • Maintain full confidentiality over the Resort’s Financial status.
  • Maintain good relations and be high spirited with the Finance Team as well as they entire resort team.
  • Use creative and positive thinking. Throw new ideas for the constant improvement of the Cost Control section.
  • To maintain proper control over inventories and keep track of the movements.
  • To investigate and resolve any discrepancies in monthly stock takes, highlighting areas of excessive consumption or loss.
  • Monitor team members’ meal costs and report on any abnormal variances prior to month end.
  • Controlling and recording all officer’s check allowances, entertainment expenses and breakages and report any non-compliance to the Chief Accountant for follow up with the resort management.
  • Responsible for preparing the ageing of slow-moving stock pertaining to all stores and keep track of the requisitions from departments based on ageing.
  • Prepare short expiry reports on frequent intervals in order to avoid the items getting expired.
  • Work closely with purchasing department to save costs in all the possible ways.
  • To perform the duties of the Chief Accountant as per his/her job description when he/she is on leave.
  • Continuous updates and learning on Resort computer-based programs and systems.
  • Assists in maintaining accurate and timely financial and operating information/reporting and ensure deadlines are met and maintains professional and technical competence.
  • Demonstrate a sound awareness of occupational safety and health policies and procedures.
  • Facilitate the reporting and investigation of injuries and illnesses arising from workplace activities, recommending corrective actions to prevent or minimize the chance of recurrence.
  • Prepare to implement assigned tasks during emergencies such as fires, power failures and tsunami.
  • The Resort requires that you perform any task deemed necessary by the General Manager / Hotel Manager for the efficient running of the Finance Department specifically and the Resort in general.
