JOB REQUIREMENTS: Update and revise kitchen manual(s) for current
operations Prep, prepare and serve meals alongside food service staff
Create tools/lists and written guides for kitchen staff including:
Beginning and end shift checklists Dining room set up Dining room and
kitchen cleaning tasks daily & weekly Set cooking processes for each
food item or category on menu How to store food items, including for
freezer Equipment maintenance and cleaning Process for accepting food
deliveries Staffing responsibilities Recruit, hire, train, supervise,
schedule and evaluate food service staff Conduct all interviews of
applicants referred from Workbright or other resources Complete all
reference checks of potential employees Hire all kitchen staff and send
hiring paperwork through Workbright Determine standard work ratios &
staffing needs in writing to assist hiring process Create schedules and
share with staff at least two weeks ahead of time with staff Follow
procedures in kitchen manual Review all kitchen employee timecards Build
and maintain pool of staff for the rental season to work both weekdays
and weekends Summer Camp specific documents Creation of all weekly menus
for camp to include a two week rotation to best use food Creation of
gluten free and vegetarian menus with standard items to replace food
items on regular menu Creation of special diet alternatives seen in
camper population Create milk program count process in written format
and ensure reimbursement documents are submitted on time Create menus
for camp events including campouts, special events & snacks working with
the appropriate staff Assist in ordering snacks for Trading Post from
vendors Rental Season specific responsibilities: Creation of menus based
on Rental group requests and Hospitality Director requests Work with the
Hospitality Director with Rentals special diet accommodations Maintain
files for each group with menus, final notes, food costs and other
information Work with vendors to identify new products and items for
Rentals menus Place all food and supply orders and/or schedule delivery
or pickup of said items Annually review and update Rentals menus with
Hospitality Director Submit Rentals food service report for each Rental
group to Hospitality Director within one week of the completion of the
group\'s event Other responsibilities: Monthly inspection of food in
refrigerators and freezers. Removing old food on a regular timeframe
Periodically review food products in storage to ensure freshness and
usage Clean other kitchen areas as needed after groups/end of week in
summer Maintain inventory of supplies in all kitchen areas Ensure all
kitchens follow food service codes and regulations Maintain
certifications needed for food service operations Work with the
housekeeping department to deep clean all kitchen areas at least once a
year, more if needed Work with vendors to ensure best pricing and
products for food service Work with the Facility Director to ensure
equipment is safe and in working order Order supplies and equipment as
needed for all kitchen areas All other duties as assigned *****
OTHER EXPERIENCE AND QUALIFICATIONS: The position requires the ability
to stand for long periods of time, lift up to 50 pounds, experience in
food service and have, or the skills to obtain, a ServSafe Food Manager
certification or equivalent Minimum of three years of food service or
related experience Experience in using various computer programs
